1. Introduction

 

When it comes to the foods that we eat what we take into our bodies matters.  For many people going on a diet or attempting to lose weight means cutting out food and removing the object that they feel is causing them to gain the weight.  The fact is that we need food to survive.  When you remove food from our diets we are actually sending a signal to our bodies telling them that there is no food and they need to start storing what food we do get for reserve, in essence, building more fat instead of losing it.

 

This is a major problem and one that can easily be addressed by selecting the right foods to eat and making sure that our bodies receive these foods on a regular and consistent basis.  One major problem comes into play is when the foods that we eat are no longer fresh or are preserved using artificial means.

 

One way that you can help keep the foods that you eat as fresh as possible all year round is to perform the art of canning.  Canning is an age old practice where you take the foods that you want to preserve and seal them into an airtight container for later consumption.

Why would you want to can your food?

 

The reason that you want to can your food is to preserve it in its natural state.  When you can food you are removing all the air and harmful decomposing elements that will make the food decay or spoil.  When you can food you are also preserving all of the vitamins and minerals that occur naturally in our food.  These natural occurring vitamins and minerals are essential to your health as well as your overall weight loss goals.

 

When you can food you will have a constant supply of these fresh foods all year long.  These foods, when consumed on a regular basis, will start to manipulate your metabolism as well as send signals to your body that what it will receive will be good for it and that there will be no need to store any for a later date.  When this occurs our bodies will begin to relax and function at peak performance levels.

2. What Types Of Food Can You Can?

 

When it comes to canning foods there is a wide variety to choose from.  For most people canning fruits and vegetables are most popular.  When we grow our own personal gardens or  have access to a surplus of fresh and organically grown food we will want to implement the process of canning in order to store these foods for later consumption.

 

Some foods that you will not be able to can are meats and dry able products such as herbs.  These can be preserved for later use but will go through a dehydration process which is similar to canning but instead of removing air from the food it removes water.

 

3. How Does The Canning Process Work?

 

When we look at the canning process three are two types of canning that can be performed.  There is one canning method for high acid foods and there is another canning method for low acid foods.  When we talk about high acid foods we are talking about foods that include jams, jellies, juices, salsas, tomatoes, relishes, pickles, vinegar, and chutney.

 

When we talk about foods that are lower in acids we are talking about foods such as Vegetables, meats, poultry, and seafood.  These foods will require a special high-pressure canning process that will heat the food to 240 degrees and keep the foods fresh up to a year.

 

4. High Acid Food Canning Method

 

When it comes to the high acid food canning method you will need the following:

 

  • A bath canner which can be used in boiling water or  a large sauce pot complete with a lid and rack.

 

  • Glass jars complete  with lids and bands.

 

  • Kitchen utensils, such as a ladle, wooden spoon, and funnel.

 

  • Fresh fruit, vegetables and other fresh ingredients

 

Once you have these items in place, you can begin the canning process.  To do this, you want to make sure that all of your food is washed and dried.  You want to make sure that your working environment is clean and free of debris and that you wash your hands before touching and handling any food or utensils.

 

When you are prepared and your workstation is cleaned and all of your food is washed you will want to heat your home canning jars in hot water making sure not to boil the water until you are ready to use the cans.

 

Start by filling a large saucepan with water to the half-way point. Place the jars inside the saucepan equally spaced.  Next heat the water over a medium heat. You don’t want to boil the water too much or they may crack and shatter which will result in dangerous conditions. 

 

Keep the jars warm until they are ready to be used. This is also a good strategy to make sure that the interior of the jars are clean of dust and debris.    Keeping jars warm prevents them from cracking or breaking once the hot food is added.  The lids and bands can be kept at room temperature to make easier to handle them.

 

Once your jars have reached their desired temperature you will want to add the food that you wish to preserve to the jars.  You want to take your time and fill each jar one by one.  When the jar is filled place the cover and rim on the jar and put into a canner.  Repeat this process until all of the jars that can fit into the canner are filled. 

 

When the canner is filled lower into the boiling water until the lid is submerged.  Allow cans to boil for an appropriate time for your specific recipe.  When finished remove the cans out of the canner and place on cooling rack.  When the process is done all of the remaining air will compress the lid onto the can sealing it from any germs and bacteria.

5. Low Acid Food Canning Method

 

The low-acid food canning method is followed in almost the same way.   The only difference is that with the low-acid food canning method you need to use a pressure canner which will help keep the food fresh.  Once the food and jars are prepared like you did in the previous section the next step is to fill them and then lock the pressure lid in place, making sure to open the vent pipe.  Then you will want to adjust the heat on the sealer to a medium-high heat.  From there you will want to allow the  steam to escape through the open vent pipes. Once the steam is escaping from the cooker the next step is to wait for approximately 10 minutes.  Once the steam has escaped you should now refer to the manufacturers manual for your particular canner to close the vent.

6. String Your Food

 

Once you have your food prepared and canned it should be stored a cupboard or pantry.  When you store your food you will be able to keep it fresh up to one year.

 

When you store your food you will also want to check on it periodically to ensure that the jars have not cracked, the lids aren’t losing their seal or if any discoloration or visible signs of decay are forming.  If you do see these you will want to discard the can or jar immediately.  You will also want to write the date the food was canned with a permanent market on the top of the lid.  When you do this you will be able to keep track of when the food was canned and when it may not be safe to no longer consume.

 

When it comes to losing weight and eating healthy food keeping a fresh supply of organically grown foods that you have made and canned yourself is a wise choice.  When we rely on food that we don’t know where they came from and what items were used in their construction we are adding a level of risk of eating foods that are not healthy and which in the long run result in additional weight gain and other health issues that we are working to avoid.
